Thanks, Snehal for this delicious recipe. I have made a few minor changes to make life easier for the working woman ;-)
Ingredients:
250 gms potatoes
1/2 cup ready-made pizza sauce
1 capsicum
1/4 cup boiled yellow corn or frozen sweet corn (thawed)
1 large onion, chopped
2-3 tbsps chopped black olives (optional)
2 tbsps chopped mushrooms
Salt to taste
2 tbsps grated mozzarella cheese
Method:
1. Boil and mash the potatoes. Make small flat pancakes from the boiled and mashed potatoes
2. Spread the pizza sauce on the potatoes
3. Decorate it with capsicum, corn, onions, olives and mushrooms, grate cheese on top. Bake in an oven at 400 degree celsius for 15 minutes.
The same combination can be used on a ready-made pizza base. In such a case just minus the potatoes
