Dum aloo

I'm pleasantly surprised by the wonderful response I'm getting already. Here is one dish which was requested by my friend Aanchal from the UK.

Ingredients:
500 gms baby potatoes
250 gms curd
2 tsps red chilli powder
2 tsps jeera powder
2 tsps turmeric powder (haldi)
Salt to taste
Oil for frying

Method:
1. Boil or steam the potaotes in a pressure cooker (put the potaotes in a separate container without water while cooking them in the cooker. This prevents the potatoes from getting over-cooked and crumbly). Once done, cool and peel the potatoes
2. You can either deep-fry or shallow fry the peeled potatoes, depending upon your preference, till they are light brown in color. Keep them in some absorbent paper to remove excess oil
3. In a big bowl, thoroughly beat the curd to remove any lumps. In this mix in all the spices and marinate the fried potatoes in this curd mix for about 20 mins
4. In a kadai, take 2 tbsps oil and let it heat. Add the potaotes-curd mixture and cook till all the water evaporates from the curd
Serve hot with rotis
