Khubani ka Meetha

Here is the recipe for Hyderabad's very own and very delicious dessert. This is an absolutely delightful dessert, which is very easy to make and goes great if you're having a biryani party at home. I'm sure your guests will ask for more ;-). The below proportions serve 3-4 people (single serving) and if you anticipate more people, then increase the proportions accordingly

Ingredients:
100 gms khubani (dried apricots, seedless)
50 gms sugar (more if you like it sweeter)
A few almonds and pistachios chopped
1 cup water

Method:
1. Soak the apricots in warm water for 4-5 hours till they turn soft
2. In a pan, add the apricots, water and the sugar and cook covered till the mixture turns a gooey dark brown colour and the sugar dissolves completely. If needed, you can also roughly mash the apricots with a fork
3. Garnish with almond-pistachio slivers. Serve hot with cream or cold with vanilla ice cream (I personally prefer cold with ice cream)
