This one is a good-looking dish that can do well when you have kids over for dinner/pyjama parties.
Ingredients:
1 pack instant noodles (I prefer Top Ramen)
2 medium sized potatoes, boiled peeled and mashed
3-4 slices of bread, crumbled
Salt as per taste
1/4 tsp turmeric powder
1/2 tsp red chilli powder
Choice of filling (hard-boiled eggs, shelled/leftover mixed veg sabji/boiled peas sauteed with onions/any leftover minced meat or chicken dish)
Oil for frying
Method:
1. Prepare the noodles as per instructions on pack, albeit with less water as they need to be dry
2. Knead the bread crumbs into the mashed potatoes along with the turmeric and chilli powders
3. Make an egg sized ball of the mix, poke a hole in the middle with your thumb about the size of a small lemon. Stuff the filling and close the opening. If you're using boiled eggs, then make a layer of potato-mash to cover the egg
4. Deep-fry this ball till it turns golden brown. Leave on absorbent paper to remove excess oil
5. For serving, layer the noodles in a plate to make it look like a nest, add one or two 'eggs' in the middle of the 'nest' and garnish with chopped coriander leaves to make it look like a real nest
Serve hot with tomato sauce and enjoy watching the kids dig in. You can also make 'eggs' with different fillings so that the eater gets a surprise with each 'egg' :)
